Requirements :

Grade 10 with minimum of 6 years' experience, in a hospital or other large scale formal Food Service environment. Senior/National Senior Certificate (Grade 12) with minimum of 2 years' experience in a hospital or other large scale formal Food Service environment. Higher certificate (NQF level 5) in Food service/Hospitality with a minimum of 1 year experience in a hospital or other large scale formal Food Service environment. Must have knowledge of Food service procedures, protocols, hygiene and safety. Must have good verbal, writing and communication skills. Have basic numeric and computer skills. Must have leadership, decision making, good problem solving and supervisory skills. Must be reliable, trustworthy and able to work under pressure. Must have knowledge of large-scale food service equipment and their functions, stock taking and inventory control. Must have the ability to discipline staff members under his/her supervision. Must have relevant meal preparation skills and knowledge of different cooking methods and the ability to read and interpret large scale recipes.
Duties :

Supervising of Food Service Aids under your supervision. Responsible for receiving, storage, issuing and control of stock and assist with cost control measures. Able to read menus, recipes and supervise the production, issuing, portioning and distribution of meals. Supervise and control washing of dishes, crockery and cutlery. Supervise the usage of the dish washing machine and macerator by sub-ordinates. Ensure hygiene and safety measures are maintained and practiced in all areas in the Food Service Unit. Assist with preparing meals and décor for functions. Do ward rounds and assist with plate waste studies and client satisfaction surveys. Responsible for control and safekeeping of large and small equipment and function items. Monitoring and reporting of faulty equipment and condemning of broken and redundant items.
