Three-year National Diploma in Food Service Management at a University of Technology (HET level) or three-year National Diploma in Food Service Operations Management @ a University of Technology (HET level) or four-year bachelor’s degree in food service management @ a University of Technology (HET level) or four- year BSc Degree in Food Management at Potchefstroom or Pretoria University (HET level). Computer literacy. Good verbal, writing, calculations, and computer skills. Must be able to work shifts, weekends, and public holidays. Be willing to rotate inside the unit in various areas. Good leadership, managerial and communication skills. Good report writing skills. Innovative, Integrity, Enthusiasm, Passion, Professionalism and High sense of duty. Able to handle and work under pressure. High level of reliability. Catering skills. Knowledge of Food Service Policies, Procedures and Acts and protocols governing food services. Knowledge and application of National Core Standards and Food Service Audits. Knowledge of PFMA and Supply Chain Management Regulations.
Duties :
-
Direct control and administration of Food Service Staff and Operations. Compliance with relevant Policies, Regulations, Acts and Procedures. Assist in menu planning, compiling master orders, menu costing and give inputs in the departmental budget. Ensuring all procedures are followed at the ordering, receiving, storing, and issuing of stock. Ensure production procedures are adhered to and followed during preparations, distribution and serving of meals. Ensure that Hygiene and Occupational Health and Safety Measures are adhered to and followed. Responsible for effective human resource functions and optimal labour utilization. Ensure effective usage and management of equipment. Give inputs in planning of equipment and utensils. Identify, plan, and conduct relevant training for staff. Assist with training of Food Service and Dietetic Students. To execute any fair and lawful additional instruction given by supervisor.
